On my way home from university today I was, as per usual, thinking about what I would have to eat later on in the day. I decided on a salad and the more I thought about it the more I just wanted to go home, make it and eat it. And skip the gym entirely.
But it was too early on in the day for dinner plus my boyfriend was coming over so it would’ve been a bit cruel to have eaten it all myself while he was in his seminar. So I went to the gym like planned and then battled against the painfully strong winds and rain, making getting home a mission. (Edinburgh is pretty depressing in this weather incase you were wondering).
- bean sprouts
- hard boiled eggs
- sesame seeds
- creme fraiche/ plain yoghurt
- salt and pepper
- mixed herbs
- olive oil
- balsamic vinegar
I think it’s pretty straight forward how to make it… We had ours with some fresh olive bread and finished the whole bowl- that good!
P.S. I am currently worried about surviving this night…the wind is so loud and strong I’m not sure I won’t get blown away when leaving my flat…
