The other day when I made the berry layer cake I also made dinner.
I wanted something easy (as the cake took me forever), summery but still rich in flavour.
I spent some time on Pinterest trying to gather ideas for something I could make.
In the end I combined a variety of ideas and added some of my own and with that the Summer Shrimp Burrito was born.
1. Chop up avocado, tomatoes, onions and shrimp.
2. Squeeze in the juice of 3 limes and mix in the chopped coriander.
3. Mix it all well and leave it in the fridge for some time so all the flavours can combine.
4. Heat up small tortillas, put some salad in them and then top generously with the shrimp mixture.
5. Wrap up and enjoy!
*Sometimes raw onions are hard to digest so what I do is chop them up and then cover them in salt and let them sit for as long as possible (the longer the better).
Rinse them well before putting them into your dish.
Remember the salty flavour will stay so you will need to put in less salt into the food.
