Greek yoghurt and mixed berry muffins

On one of my pinterest quests I found THIS recipe for greek yoghurt and mixed berry muffins.
Realising I still had greek yoghurt left over from another meal I made, I decided to give it a shot.Greek yoghurt and mixed berry muffins // L.Alexandra

You see, my baking skills have never been that great.
I try again and again but somehow they never turn out like they should…
Until today.
I think today’s muffins turned out pretty well.Greek yoghurt and mixed berry muffins // L.Alexandra

Ingredients:
♦ 1 cup plain Greek yoghurt
♦ 100 ml canola oil
♦ 2 large eggs
♦ 2 teaspoons vanilla extract
(I added a bit extra for good measure)
♦ 2 1/4 cups flour
♦ 2 heaped teaspoons baking powder
♦ 3/4 cup brown sugar
♦ 1 3/4 cups frozen mixed berries
♦ Extra sugar for sprinklingGreek yoghurt and mixed berry muffins // L.Alexandra

Preheat your oven to 190°C.
Combine yoghurt, oil, eggs and vanilla in a bowl and mix until smooth.
Sift flour, baking powder and sugar into a large bowl.
Stir in the frozen berries, add the yoghurt mixture and stir together.
Divide the batter in a muffin tin or cups and sprinkle with some sugar.
Bake them for 20 min. or until golden on the top on the middle rack.
Best served warm however, mine made loads so I froze a bunch to have at a later point in time rather than having to eat over a dozen muffins in a few days (although I’m sure I could!)

    • Yeah they are! I made so many that I froze over half (I think I made like 18) and I thaw them a few hours before I want to eat them.
      Popping them in the microwave for 30-60 sec. before eating makes them taste a lot fresher :D
