I kept seeing people make sweet potato fries but mine never really turned out as crispy as I’d have liked.
So I read a bunch of recipes online and came up with my own.
Sweet potatoes are a packed with calcium, potassium, iron, magnesium and vitamins A and C.
So you can be healthy and feel like you’re indulging at the same time!
What you’ll need:
(Makes enough for 2)
♦ 2 large sweet potatoes
♦ 3 tbsp olive oil
♦ 1 tbsp fresh (or dried) rosemary
♦ 1/4 tsp cayenne pepper
♦ 1/2 tsp paprika
♦ 1/2 tsp sea salt
Preheat your oven to 180°C.
Rinse the sweet potatoes and give them a light scrub to get off the dirt and then chop into thick strips.
Place the cut strips into a bowl of water for 15 min.
Meanwhile in a ziplock bag prepare all the spices and the oil.
Pat the potatoes dry and put them in the bag and make sure they are evenly coated in the marinade.
Next place them on a baking rack so that they aren’t touching and put another tray under the rack in the oven as they will drip.
Leave them to bake for about 30-40 min.
While the potatoes are baking prepare the guacamole.
I like to mix mine with a bit of creme fraiche, lime juice and salt.
The two together give such a great combo, especially as the sweet potato marinade is slightly spicy.
