I got a food processor for my birthday so I’ve been trying to make as many dishes possible using it.
And I’m loving it!
One of the first dishes I made using the mandolin slicer disc was this fennel bean salad with feta inspired by the LEON cookbook Fast Vegetarian.
I made this for my Mum and me as a light dinner one summer night but it would also be a great starter or side.
♦ 200g green beans
♦ 1 fennel
♦ 70g feta cheese
♦ Nuts (I used almonds, walnuts etc.)
♦ 1 tsp dijon mustard
♦ 50ml lemon juice
♦ 100ml olive oil
♦ Salt and pepper
Steam the beans until they are still slightly crunchy and put aside to cool.
For the dressing mix everything together well and place in the fridge to chill.
Thinly slice your fennel (this is where my food processor comes in handy!)
Lightly roast your nuts and mix together the fennel, beans and nuts.
Crumble the feta cheese and tear up the basil over the salad and add the dressing.
And it’s ready to be served!
