As the temperatures are dropping, I’m spending more time inside and creating new recipes like this beetroot quinoa with orange and fennel dish.
Like all my recipes, it’s quick and easy to make.
It’s also good hot or cold.
♦ 1 cup quinoa
♦ 1 1/2 cups grated beetroot
♦ 1 fennel bulb
♦ 1 orange
♦ Fresh mint
Cook quinoa according to instructions in water with bouillon.
Add in the grated beetroot and cook for a couple of minutes.
Thinly slice your fennel (I used my food processor) and cut up your orange.
Top the quinoa with the fennel, orange, mint and a drizzle of olive oil.
