This might not look or sound like the most spectacular soup but there’s something about a warming and filling soup in winter.
Lentils have many benefits plus they’re easy to use in a variety of meals. They reduce blood cholesterol due to the high levels of soluble fibre they contain, they’re are a good source of folate, magnesium and protein.
♦ 1 onion
♦ 2 medium carrots, chopped
♦ 1 tbsp tomato paste
♦ Thumb size piece of ginger, finely chopped
♦ 3 tbsp Rogan Josh (Indian curry paste)
♦ 1 cup lentils
♦ 4-6 cups of water (depending on desired consistency)
♦ Pepper and salt (mine is from Sel des Alpes)
♦ Lime and coriander
Fry the onion in some oil and then add in all the ingredients (told you it was easy). Simmer and cook for about 15-20 mins.
Add everything to a blender or use a hand blender to puree the mixture.
Serve with coriander and lime.
