Lazy girl dinner: rice, beans and butternut squash

This is the ultimate lazy girl dinner. And I just found this picture while cleaning up my photos and realised I never shared the recipe.
I only have one picture because I was hungry and was being lazy but here goes.

RECIPE:
♦Brown rice
♦Kidney beans
♦Corn
♦Butternut squash/pumpkin
♦Coriander
♦Salt and pepper

Preheat your oven to 180°C and dice the butternut squash. Add to a baking tray with some olive oil, salt and pepper and bake for 20 min or until soft.
Cook the rice according to the instructions and once done add in the corn and beans and heat through for a couple minutes.
Arrange on a plate, add the butternut squash and top off with coriander.
Bam done!

I originally made this dish because I had leftover butternut squash and coriander. And pretty much nothing else in the fridge. So I checked my pantry and found rice, beans and corn. Hurrah for zero food waste and still creating a healthy meal.
